Elvis Hand Pies

I have a soft spot in my heart for Elvis. I’d never thought twice about him until my tenth wedding anniversary, when my husband surprised me with a vow renewal service at the Graceland Wedding Chapel in Las Vegas. The officiant? Elvis, of course! Ever since, I’ve been obsessed with the combination of peanut butter and banana. I’d never realized how good the flavor is. It goes great in everything, not just sandwiches. These hand pies are a combination of classic pie and the Elvis Sandwich, and they’re perfect for thinking about the King—or just for a quick morning breakfast!
1 recipe All-Butter Pie Crust (page 59)
6 teaspoons creamy or crunchy peanut butter
1/2 banana, sliced
Honey, as needed
1 egg, lightly beaten
Granulated sugar, for sprinkling
1. Roll out the pie crust dough to 1/4 inch thick. Refrigerate for 30 minutes.
2. Preheat the oven to 375°F. Line a cookie sheet with parchment paper or a silicone baking mat.
3. Cut circles of crust using a 2-1/2-inch round cookie cutter, rerolling the dough as needed. You will get about 20 circles.
4. Lay out 10 circles. Place a heaping 1/2 teaspoon peanut butter in the center of each and top with one slice of banana. Drizzle with a little honey.
5. Using your finger, wipe a little bit of the beaten egg around the edges of the crust. Top with a second circle of dough and press lightly. Press with the tines of a fork to seal. (The egg acts as glue so the pie stays together.) Repeat with remaining pies and then pierce the top of each a few times with a fork. Place on the prepared cookie sheet.
6. Again using your finger, rub a little egg over the top of each pie. Sprinkle with a pinch of sugar. Bake for 13 to 18 minutes, until the bottoms start to turn golden. The pies will still be somewhat pale in color. Cool on cookie sheet at least 5 minutes before eating. Store in an airtight container in the refrigerator. Best eaten within 2 days.
Tip These pies are not limited to peanut butter and banana! Use your favorite jam, or replace the bananas with chocolate chips for a peanut buttery chocolate treat!
